Suitable for Vegans. Deep red colour with a nose that gives typical Merlot aromas such as plums and blackberries, complemented by the type of Casablanca, moist soil and spices. Because of it’s structure it’s flavour is a great companion with meals. Good presence of tannins and a very pleasant natural acidity. Italian food is wonderful with this wine. Extra notes This wine was fermented in stainless steel tank with controlled temperature and with a select yeast. Before starting the alcoholic fermentation the wine was kept in a cold soak for 5 days, the idea being to obtain better concentration of colours and fruit aromas. To finish the alcoholic fermentation the wine was kept with skin contact for 12 days in order to obtain maximum volume on the palate. Then we fermented the wine, one part in stainless steal tanks and the other portion in barrels; we blended and aged for nine month before bottling.
