More than a wine, a poemWhoever has tasted Undurraga's icon wine Altazor will surely agree on that it is not only a pleasure to the senses, but a poem in itslef. In fact, the blend of Cabernet Sauvignon (65%), Syrah (16%), Carmenere (16%) and Merlot (3%) now crafted by Alvaro Espinoza bears the name of a well known poem written by Vicente Huidobro. Huidobro was a Chilean pet who lived at the beginning of the XX Century, met Picasso, Miro, Max Ernst, Paul Eluard and other members of the Parisian vanguard, corresponded with Dad's Tristan Tzara founder, and himself was the father of "Creationism", an artistic and literary movement which held that poetry brought life to things, not just described them. Viña Undurraga's finest expression of winemaking. This Cabernet Sauvignon made with grapes from the best and oldest vines of the Santa Ana Estate, located in Talagante, Maipo Valley. Altazor is an elegant ruby red colour wine with deep intense tones characteristic of its evolution. It has a complex aroma with a delicate balance between the woods and ripe fruits. On the palate it is powerful with mature tannins that assure to the wine a long life. It has a pleasant and lingering finish.Wine and food: Altazor should be paired with delicious caviar or lobster blinis, a filet mignon of wagyu with portobello mushrooms and wild rice, also with a terrine of foie gras on a bed of fine baby greens, or with a hand made spinach tagliatelle delicately accompanying a tuna steak a point.Wine Maker: Alvaro Espinoza, among his many outstanding professional merits is his Diplome National d'Oenologue, which he received after studying in Bordeaux, France, after his debut at Undurraga.
